If you want to try an artistic experiment, you could have her watch the films in this order: New Hope, Empire Strikes Back, Attack of the Clones, Revenge of the Sith, Return of the Jedi, Phantom Menace. I have seen that suggested by someone on the Internet as a way to improve one's experience of the prequels. Clones/Sith are now an extended flashback, Palpatine's reveal as a Sith is now a surprise, and Phantom Menace is just bonus material, so expectations are lower. I kind of like the idea.
